Beth Bakes: Chocolate Chip Bananut Muffins

Friday, May 22, 2015

Hey friends! Happy Friday and long holiday weekend! I've been lucky to have some time on my hands and so I've been back to a comfort zone of mine, the kitchen! Although, I have recently accepted a new job (yay!) and so I'll be back to 9 to 5 lifestyle.

Anyway, ever since I was allowed to use the oven without supervision I have been baking. I went to private school and never got the home economics class my public school friends had. I'm glad I didn't have that class because I'm not sure I would like baking as much if I was "forced" to participate in it.

Baking is something I got from my grandmothers. I think it skipped a generation because my mom can only bake boxed mixes. Nothing wrong with that though! I love me some confetti cupcakes!

My Nana and Grandmother were always busy making Christmas cookies. My Grandmother used to make the most thin cut out cookies. She even had a recipe for chocolate cut out cookies which I've never seen anyone else offer chocolate! My Nana has a snickerdoodle cookie recipe that is on point. You can eat them alone but sprinkle them over ice cream and you say, "I can die now!"

Lilly Pulitzer for Target Haul

Tuesday, May 5, 2015

Hello and happy Tuesday! I am so excited to share the loot I got from the madness known as the Lilly Pulitzer for Target collection released on April 19. I know it's long overdue but I've had lots of things going on. I always mention to follow me on social media because then you never miss a beat. I've been on snapchat (eakern) a lot lately making fun little videos. If you're not watching you're missing out!
Watch the YouTube video I put together to show the five items I got from the collection!

Rave & Review: Vitacost Haul #4 - Gluten Free Edition

Tuesday, April 28, 2015

Hey friends! Happy SUNNY, Tuesday! Anytime it's sunny out I take full advantage of it. This morning I went for a run/walk. My knee has been acting up so I haven't been able to run as much as I'd like to but I'm still trying to keep active. Then I even laid out in the sun until it got a little to cloudy and with the wind I got a little cold.

Good thing for you that the clouds came out because now I have no excuse not to blog! I have a video of my latest Vitacost haul! This haul was not planned to be gluten-free but it wound up being that way so it was pretty cool.
I do not have Celiac Disease however I am sensitive to gluten. I've always had issues with my stomach since high school. My senior year I missed over 30 days of school because of my stomach issues. I've been on and off enzymes so help me digest food better, antacids to help with acid reflux and the list goes on.

I do still eat gluten products like wraps or Food for Life English muffins but prefer to eat gluten-free when I can. My tummy just thanks me for it. Shall we get into the haul?

Tips for using Poshmark App

Friday, April 17, 2015

Happy FriYAY, everyone! We made it through another week. Spring is finally happening in PA, each week we get warmer temperatures and more sun! I've already got some freckles and some color back in my Casper white skin.

Any exciting plans for the weekend? You know I am definitely going to be at Target on Sunday for the launch of Lilly Pulitzer for Target! I am super excited!! I shop Lilly regular priced, been to many warehouse sales but now to combine two of my favorite brands together is UNREAL! I will probably be doing Snapchat that day so watch out! My username is eakern.

Alright, so I'm really here to talk about the Poshmark app! Now, I don't usually review apps but this is beyond an app. It's like the best mall you've ever been to! I know everyone loves when I have fashion hauls and I get emails about certain things I wear. I thought this would be a great way to review the app and let you know I have a closet!

Beth Bakes: Gluten-Free & Vegan Protein Blueberry Muffins

Wednesday, April 15, 2015

Hey friends! Who's hungry? I've been back in the kitchen lately and it feels so good. I can't believe how much I missed it. I feel comfortable in the kitchen but it's also a place where I like to experiment and push the envelope.

Usually high schools work home economics into the curriculum. That was not the case if you attended Catholic school. Since you have Theology everyday that alleviates a spot where you could have an elective or study hall. Catholic schools also have limited budgets and so there were no resources to build an extra kitchen. The only kitchen was in the cafeteria and that was off limits.
I'm actually glad I didn't learn to bake in high school because I may not have developed the same feelings toward it as I have now. Baking is how I show people I care, it calms me down when I'm stressed or helps me express myself creatively.

Beth Bakes: Protein Waffles

Tuesday, April 7, 2015

As promised here is the recipe for protein waffles!

1 scoop protein powder (I use Perfectfit)
1/2 mashed banana
1/4 cup liquid egg whites
Almond Milk
Cinnamon to taste

1. Mash half the banana.
2. Add your protein powder.
3. Add liquid egg white.
4. Stir and add as much almond milk to get a thin but not watery batter.
5. Add cinnamon to taste. Lately, I have been using the cinnamon flavor protein powder so I haven't been adding it.
6. Eat right away or wrap in foil and freeze for another day.
7. Enjoy the fruit on top instead of sugary syrup!

What Did I Buy?: Old Navy Edition

Hey friends! It's Tuesday and a cloudy Tuesday here in PA. We had beautiful weather yesterday and I miss it already. Looks pretty rainy for the rest of the week though. Oh well I have some cute clothes to show you from Old Navy to brighten the mood.

Back in middle school when we had dress down days (a.k.a. a day off from wearing our uniform) I remember rocking my tech vest hardcore. However, when high school came around I gave Old Navy some shade. In my head I could only wear Hollister or A&F to be cool. Which for the record, I wasn't cool with out without the clothes! haha

I'm now in my 20s are realize that I don't care about where it's from as long as it keep me in budget and it look nice. I actually love seeing people's faces when I say my clothes or shoes are from Target, Old Navy or random online stores.

#FridayFingers: Essie Spring 2015 - Blossom Dandy

Friday, April 3, 2015

Hey friends! I don't know about you but I am more excited than ever for the weekend. No, not because of the Easter holiday. My family doesn't have plans to celebrate the holiday.
It's because my NYU spring course is over and I can finish reading Girl on the Train and get back to binge watching on Netflix. That's truly my favorite kind of weekend. Yeah sure, I love going out with friends and traveling but sometimes you just need an all about me weekend.

#FridayFingers is Back!

Friday, March 27, 2015

Happy Friday, everyone!! I hope you all have exciting plans for the weekend. I know I have some school work to get done but I'm also going to play a little. My a friend from high school will be coming into town tomorrow.  Her family, my Dad and I will be attending a hockey game at the PPL Center. It will be my first time at the arena so I'm very much looking forward to it.

I was looking at my massive nail polish collection (I have over 100 polishes) the other day thinking I needed to start doing my own nails again.

Must Haves: Winter Beauty Edition

Sunday, February 22, 2015

Hey friends! I'm sorry I've not been posting regularly. I've had a lot of stress in my life the last couple of weeks and that really made me feel like doing...NOTHING. I've eliminated some of the stress from my life and feel a little better.

Now, I'm enrolled in my second last class at NYU before earning a certificate in Integrated Communications! I usually don't have time to blog when class is in session but since this class is all about establishing yourself personally and professionally online. I'm actually using this blog as a project for the class! WOO-HOO!
Alright now onto the real reason you came here, my winter beauty recommendations! Let's begin...

Beth Bakes: Healthy Cranberry Walnut Muffins

Saturday, January 31, 2015

Hey friends! I hope you enjoyed the day so far and have even more fun as we head into the evening! I know I usually post in the morning but I just couldn't find the time until now! I had to grocery shop earlier and it was absolute crazy town! I could barely getting a park spot let alone a shopping cart. I guess with the Super Bowl and the snow coming people are stocking up! Me, I'm just trying to get my weekly shopping done! I've never experienced anything like it. Anyway, I digress.

I've got a real quick but super delicious muffin recipe to share with you! I haven't been doing much baking or cooking new recipes but the one night after look through healthy italian's website I got inspired! She made these beautiful almond cranberry muffins. I was looking at the list of ingredients and sadly I didn't have everything I needed. However, I improvised and came out with the best muffins I have made to this day!

My Fourth Stitch Fix!

Sunday, January 25, 2015

HELLOOOOOOO there!! Sorry I missed you last weekend but it was my B-DAY last week and I went into NYC to meet up with my bestest bestie! I know you're probably thinking we hit the town going club hopping but in reality we went to the American Museum of Natural History. But honestly, it was the most fun I'd had in a long time. For only $28 (oddly, the same number as my age) we saw three movies and went to this amazing butterfly conservatory and then of course there is the rest of the permanent exhibits to look at too!
