I had a lot of positive feedback from my first YouTube video on my Stella & Dot collection. So, I decided to make a YouTube video featuring my Tiffany & Co. collection. It's not a very big collection or a unique collection but nonetheless I shared it.

At the end of the video I decided to include how I store my jewelry and how I care for the sterling silver products.

We've been buying gifts and decorating our homes since November and now Christmas is finally upon us. It's always a hectic time of year because we have so much on our to do list that the month of December just flies by. Now that it's Christmas Day, take the time to slow things down and cherish the loved ones near and far (Hey, Sissy!).

Beth Bakes: PB2 Chocolate Whipped Dip

I haven't done a Beth Bakes blog entry in a long time! I've been so busy at work trying to meet goals that I haven't really had the time to think of fun and simple recipes. Oh well, I've got a recipe for you today!

This recipe is super simple and another one of my Cool Whip based dips. You know, funny thing, I'm not a fan of Cool Whip on it's own but dump things in it and I will eat the whole container! I used this dip as a dessert snack to calm my cravings for something sweet and chocolate.
PB2 Chocolate Whipped Dip
 Here's what you'll need:

1 container Cool Whip (I used the "Free" version to keep things low calorie)
1/4 cup of PB2 with premium chocolate

1. Take thawed container of Cool Whip, stir and make a hole in the center of the container.

2. Take 1/4 cup PB2 and dump into the hole you created.

3. Carefully, incorporate the two ingredients together until smooth and PB2 has dissolved.

4. Enjoy!

I used this dip exclusively with cut up Honeycrisp apples but you can feel free to use it on wafers, cookies and other fruits.

I must admit this dip is the first way I had tried PB2 and I love it. But I have some negative experiences to share too.

For those of you unfamiliar with PB2 it's made from pressed peanuts to cut out fat and oils. PB2 boasts 85% less fat calories than traditional peanut butter. Since it's in powder form, you need to prepare it as needed. One serving is 2tbsp of PB2 mixed with 1tbsp of water. One serving is 45 calories (10 fat calories).  

I tried PB2 with premium chocolate alone on a Coco Lite cake and it was bad. It made the cake mushy, which was weird and made for an awful texture.

I recently gave PB2 and second chance and tried it alone with apple slices. Again, I did not enjoy the flavor and it had a foul smell. If I get through the jar I will not be repurchasing more PB2 even though it is less calories than regular PB. It's pretty pricey and the only way I eat it is by making this dip.

I think we all learned a little lesson today. When you put two bad tasting products together it makes a delicious dip! Go figure. This dip is low calorie (if you choose), tastes great and even smells like real peanut butter. I hope you enjoyed this little recipe and review of PB2 with premium chocolate.

I must admit I've gotten back to some bad spending habits but the deals are just too good to be true! That justifies it, right? I'll start saving again after the holidays...

If you're not using the Target app, Cartwheel, you really should be! This FREE app is your ticket to big savings. I've already earned my $25 badge and I'm only a few dollars away from my $50. The app is your coupon clipper. The app stores coupons you pick out (everything from food to clothing to home decor!) and then the cashier scans a barcode and it all gets discounted from your bill and it tracks how much you saved.

Cartwheel will also send you an email when new products get added and sometimes they even offer one day deals. These one day deals are no joke and I highly suggest taking advantage of them! The other week I got an email that you could get 40% off boots. I wasn't really in the market for a new pair of boots but I added it and headed to Target on my lunch break.

I can't think of a better time to write about my Christmas decor than when it's snowing outside my window! I'm off from work today with a snow day! Snow days never get old, no matter how old you are!

I love decorating the house at Christmastime. While I decorate the house for other seasons and holidays, there is something about Christmastime that fills the house with warmth. Possibly it's the glow from all of the LED light bulbs, kidding!

This year I was hosting another Stella & Dot party at my house for Friends & Family the first weekend of December. It's also a holiday party as I like to show off the house all decorated and I try and serve some festive treats. Having the party only a few days after Thanksgiving meant that I had a lot of work to do in a small amount of time!

You have to park a mile away from the mall, screams of small children meeting Santa for the first time ring your eardrum and people's stupidity is at an all time high. Ahhh, must be Christmastime!

The one good thing about the holidays are the sales. I've never been much of a Black Friday shopper because I don't like all the chaos. However, this year I got an email from the LOFT that said everything was 50% off. Since there is a LOFT nearby that didn't involve going to the mall I took a chance.

I walked in and found one of my favorite stylists at the LOFT and told her I was looking for holiday outfits. My job usually has something casual right after our December faculty meeting and then my neighbors are hosting a holiday party this weekend.

Hey friends! I'm sorry for the delay in posts but I really needed the break! Even though I don't get paid to blog, it's like a second job to me. I just needed the time off to recharge and focus. Plus, I was trying to spend a lot of time with my sister who moved to California after Thanksgiving.
