I haven't done a Beth Bakes blog entry in a long time! I've been so busy at work trying to meet goals that I haven't really had the time to think of fun and simple recipes. Oh well, I've got a recipe for you today!

This recipe is super simple and another one of my Cool Whip based dips. You know, funny thing, I'm not a fan of Cool Whip on it's own but dump things in it and I will eat the whole container! I used this dip as a dessert snack to calm my cravings for something sweet and chocolate.
PB2 Chocolate Whipped Dip
 Here's what you'll need:

1 container Cool Whip (I used the "Free" version to keep things low calorie)
1/4 cup of PB2 with premium chocolate

1. Take thawed container of Cool Whip, stir and make a hole in the center of the container.

2. Take 1/4 cup PB2 and dump into the hole you created.

3. Carefully, incorporate the two ingredients together until smooth and PB2 has dissolved.

4. Enjoy!

I used this dip exclusively with cut up Honeycrisp apples but you can feel free to use it on wafers, cookies and other fruits.

I must admit this dip is the first way I had tried PB2 and I love it. But I have some negative experiences to share too.

For those of you unfamiliar with PB2 it's made from pressed peanuts to cut out fat and oils. PB2 boasts 85% less fat calories than traditional peanut butter. Since it's in powder form, you need to prepare it as needed. One serving is 2tbsp of PB2 mixed with 1tbsp of water. One serving is 45 calories (10 fat calories).  

I tried PB2 with premium chocolate alone on a Coco Lite cake and it was bad. It made the cake mushy, which was weird and made for an awful texture.

I recently gave PB2 and second chance and tried it alone with apple slices. Again, I did not enjoy the flavor and it had a foul smell. If I get through the jar I will not be repurchasing more PB2 even though it is less calories than regular PB. It's pretty pricey and the only way I eat it is by making this dip.

I think we all learned a little lesson today. When you put two bad tasting products together it makes a delicious dip! Go figure. This dip is low calorie (if you choose), tastes great and even smells like real peanut butter. I hope you enjoyed this little recipe and review of PB2 with premium chocolate.

I must admit I've gotten back to some bad spending habits but the deals are just too good to be true! That justifies it, right? I'll start saving again after the holidays...

If you're not using the Target app, Cartwheel, you really should be! This FREE app is your ticket to big savings. I've already earned my $25 badge and I'm only a few dollars away from my $50. The app is your coupon clipper. The app stores coupons you pick out (everything from food to clothing to home decor!) and then the cashier scans a barcode and it all gets discounted from your bill and it tracks how much you saved.

Cartwheel will also send you an email when new products get added and sometimes they even offer one day deals. These one day deals are no joke and I highly suggest taking advantage of them! The other week I got an email that you could get 40% off boots. I wasn't really in the market for a new pair of boots but I added it and headed to Target on my lunch break.

I can't think of a better time to write about my Christmas decor than when it's snowing outside my window! I'm off from work today with a snow day! Snow days never get old, no matter how old you are!

I love decorating the house at Christmastime. While I decorate the house for other seasons and holidays, there is something about Christmastime that fills the house with warmth. Possibly it's the glow from all of the LED light bulbs, kidding!

This year I was hosting another Stella & Dot party at my house for Friends & Family the first weekend of December. It's also a holiday party as I like to show off the house all decorated and I try and serve some festive treats. Having the party only a few days after Thanksgiving meant that I had a lot of work to do in a small amount of time!

You have to park a mile away from the mall, screams of small children meeting Santa for the first time ring your eardrum and people's stupidity is at an all time high. Ahhh, must be Christmastime!

The one good thing about the holidays are the sales. I've never been much of a Black Friday shopper because I don't like all the chaos. However, this year I got an email from the LOFT that said everything was 50% off. Since there is a LOFT nearby that didn't involve going to the mall I took a chance.

I walked in and found one of my favorite stylists at the LOFT and told her I was looking for holiday outfits. My job usually has something casual right after our December faculty meeting and then my neighbors are hosting a holiday party this weekend.

Hey friends! I'm sorry for the delay in posts but I really needed the break! Even though I don't get paid to blog, it's like a second job to me. I just needed the time off to recharge and focus. Plus, I was trying to spend a lot of time with my sister who moved to California after Thanksgiving.

If you follow me on Twitter, you know that I attended a private shopping event at my local LOFT. These private shopping events are awesome and I usually wind up going overboard! The guest list includes the store's top spending, fashionable women. We gather together in-store after hours, eat, drink and do what we do best, SHOP! This event was in conjunction with their Friends and Family discount, 40% off. But you could also use any other coupons you had, I had 20% off coupon so you'll see that reflected in my prices.

The mission of the evening was to stock up on work apparel. I lost some weight and none of my work pants and skirts were fitting me properly. I found the gorgeous flannel mini that works well with flats and riding boots for work. The shift style is sliming and classic, sure to be a staple in my closet for the next few years. The flannel skirt is not only warm but comfortable. However, one negative, it does wrinkle very easily. Back on the positives, the skirt has pockets!

In case you have been hibernating, Thanksgiving is only three short days away! Thanksgiving has always been my favorite holiday. I'm very close with my family and really enjoy it when we are all together. This Thanksgiving is really important to me because it will be the last holiday I get to spend with my sister.

My sister is moving across country to be in California with her boyfriend. He was offered an exciting opportunity and she decided to try something new too. While this move is only scheduled for 3 - 5 years, you never know they might love it so much they stay.

It's another Friday and may it be a happy one! Today is my favorite day of blogging because it's Friday Fingers! This weekend is packed with work for me. I signed up for Saturday Detention duty and on Sunday the school is having an Open House and a holiday event. Busy, busy, busy. I'm definitely earning my Thanksgiving break this year!

It's Sunday morning and I'm typing this post with a bird's nest in my hair. It's the result of heavy back combing to achieve my hairstyle I wore to a wedding last night. Any tips on how to get it out without losing 50% of my hair would be much appreciated! I am going to share more details on the wedding in a future post so be on the lookout!

This post is going to be some recipes I made during the week and have deemed them worthy of sharing. I made muffins with pancake mix, a low calorie caramel dip and toffee pretzel bars.

For those of you unaware, it's currently the World Series. This year, the World Series consists of the Boston Red Sox and the St. Louis Cardinals. Even though I live in Pennsylvania, I am a Red Sox fan. My boss is from Massachusetts and shares my love of the Sox too so we decided to have an office tailgate the day of Game 1.

I have been cutting back on buying non-essential beauty products. However, the change in seasons requires a change in my beauty routine.

In the Summer, I typically don't wear anything on my face but bronzer to contour. Now that I am no longer soaking up the suns rays, I have gone back to having the skin tone of a vampire. I'm proud to be pale so I let my bronzer hibernate the majority of the Fall/Winter.

Where does the weekend go?? Nonetheless, hope everyone is enjoying their Sunday. Today wasn't my usual stay in bed and watch TV all morning though. It was Baby Palooza! I attended a baptism in the morning and a baby shower in the afternoon. Both events were for dear high school friends and it's always a blast getting back together with them! The essie fall collection has been out since August but since I was having my internet issues around that time this is a bit delayed. I decided to post it anyway because people might be thinking about purchasing from the collection now.

I'm actually really pleased with the essie Fall 2013 collection this year. You'll be seeing some in upcoming Friday Fingers! So far, I have purchase cashmere bathrobe but have been looking to add vested interest to the collection.

This Friday Fingers! is about the lace is on though. At first glance, this color reminded me a lot of some colors I already own in my collection. The two colors that came to mind were jamaica me crazy (Winter 2009) and sure shot (Resort 2012).

Last week I made my all my dinners revolve around a stuffed vegetable. It all started because I was craving stuffed peppers. I like a challenge, so I decided to see if I could eat stuffed vegetables for the rest of the week. It was success and I'll show you everything I made Monday through Friday!

The best part about these one veg wonders is that there is minimal clean up and perfect for feeding one person (my situation) or a family. Last week was crazy for me so the last thing I want to do after a long day is slave over something for hours and then have to deal with clean up. These dinners are also low calorie meals, so you can eat guilt free for a work week!

Since I mentioned that these dinners are low calorie I'll put the final calorie count for each meal and put the serving sizes I used for each ingredient in parenthesis.

Hey friends...I'm backkkkk! I have restored internet to my macbook without paying $310 to Apple! I'd like to make a quick shout out to Panda Wireless for making that happen! I bought a simple USB wifi adaptor off Amazon for $12.99! Problem solved!

We have a been apart for too long that the seasons have changed! It's now Fall here in Pennsylvania but it's still pretty warm and sunny (highs in the 80s this week) so the leaves haven't begun to change.

Nonetheless, it's still Fall and so I have been cooking and baking for the season. I'd like to share a couple recipes that I've made over the last two weeks and show you how I've been getting ready for the holiday season!

I am very close with my family and we regroup on Sundays for a family dinner (minus my Sissy, although she is always welcome). Lately, I have not been coming over empty handed. Last week I made Homemade Pumpkin Soup with Maple Syrup, Apples & Bacon. I know you're thinking disgusting but it was amazing!

I want to apologize for the lack of posts to read. I have been experiencing some problems with my macbook. Right now I have limited connectivity to the internet because my computer is dropping my wireless connection whenever it feels like it.

This is the last blog about my Chicago trip! Today we are talking about what I wore while on vacation. Putting the CHIC in Chicago!

First, let me share with you that I packed everything into a carry on bag! I've gotten into the habit that so I don't have to deal with the stress, hassle and extra charges of checking a bag. The bag I used as my carry on was the Vera Bradley Weekender in Make Me Blush (retired print). It looks like the bag has been updated since I purchased mine but I'm sure it still does the job!

Speaking of bags, the purse I am carrying throughout the trip is my beloved Tory Burch Amanda Classic Handle Hobo in black.

The first outfit I wore was my outfit for the plan. I know most people like to dress very casual in tights and oversized shirts, hoodies, sweaters. I opt to go more preppy casual.

Sorry this blog has been delayed! Things have been really busy around here and I lost track of time. I hope to have the third an final installment of the series done and posted this week as well. Although, the more I continue to talk about my vacation the more I feel like I'm still on it!

This blog entry is going to be solely based on everything I ate: morning, noon and night. You all have seen me when I post pictures for my hauls, I'm slender in frame but I can pack away food! What I ate, more like what didn't I eat! Let the drooling begin!

First order of business from the airport was breakfast. We headed out to the Lakeview section of Chicago for some Ann Sather breakfast. I found out about this place from my favorite Food Network personality, Jeff Mauro of Sandwich King. Jeff lives in Chicago and features many local restaurants on his show and then goes home to put his spin on their most popular dish.

Happy Friday, everyone! What's everyone up to this week? I, myself, don't have too much going on. However, I will start to think about what I'll need to pack for vacation. I'm real organized so I'll look at what I have planned each day and then find the perfect outfit for it and put it aside. Everything needs to fit in a carry-on, I am not checking any bags, so that makes things a little interesting.

Next week, don't expect much from the blog as I will be away and will have limited Internet access. When I return I will reveal: where I went, what I did, what I ate and what I wore! That way it might be helpful for my fellow travelers!

I love all the collaborations that Target brings to us! However,  I am most excited for the FEED USA + Target collection! I am all about paying it forward because you never know when you will be in need yourself.

First, let me tell you a little bit about FEED USA and how buying items from the FEED USA + Target collection will help others.

I can tell July is around the corner because it's getting hot and humid here in Pennsylvania! Fortunately, I have air conditioning in the house. However, it doesn't always keep me as cool as I'd like. My house gets the afternoon sun. The upstairs, with fewer vents than downstairs, has the tendency to get warm.

With that said I got rid of my down comforter and duvet for the warmer months! My Dad would say I just made the excuse that it's hotter upstairs just so I can get something new. Normally, this is true. However, I promise I really needed it Dad!

Over the weekend, I had some friends over and we spent time on my patio. While my patio is small it was perfect for a party of four! Since it is a small space, it made decorating it a challenge. Plus, I was trying to stay under my budget of $100.

We made it to another Friday Fingers! I've had a busy week so this Friday feels well deserved. As you all know I work at a school and tonight was graduation. Congrats to all the seniors in the Class of 2013!

Tomorrow I'm getting together with my extended family and that always means good times! We are heading up to our private fishing club for a kids fishing contest for my cousins! Anyway, on to my nail polish.

Hello everyone! Happy Friday! Looks like the weather is going to be nice and hot here in Pennsylvania, super excited about that! To help welcome the heat I decieded to bring out a new color from essie's Summer 2013 collection, Sunday Funday.

I am so excited to talk to you about my new favorite hair product! Through my blog posts you've seen my hair super straight to loosely curled. However, you have yet to see my natural hair...until now!

I have loose wavy hair when I let my hair air dry. I rarely wear my hair in it's natural state because I could never find a product that helped keep my hair from frizzing AND keep the wave. My hair is very fine and so the slightest bit of product build up turns my waves to straight hair that looks dirty from the product.

I'm excited to be back with Friday Fingers! It's a special edition as my friend is getting married this weekend and I am attending her wedding! I'll do a blog post showing what I wore to the wedding/reception and pictures from the wedding/reception.

I got my nails professionally done this week because I really needed my cuticles cleaned up. I actually think they look crappy. The color at the tip of my nails is too thin and will probably be chipped by tomorrow. Very disappointing, considering there is three coats of polish on the rest of my nails.
